We left a small section of our Kick On Ranch Riesling fruit hanging on the vines until mid-November 2014 to concentrate and botrytize. Raised in glass, the wine fermented naturally for more than a year until it reached its final, finished balance of 15.5% alcohol with 3.6 g/L of residual sugar. As you can see by the numbers, this is not at all a heavily sweet dessert wine, but it is one with a honeyed, nuanced kiss and fantastic acidity. It's best enjoyed between cellar and room temperature, sipped from a snifter glass. Try it with a selection of cheeses, and expand your idea of what Riesling can be. You'll be one of no more than 36 people in the world to have the chance.
